Yes, it has to cook like beef. The test is to flame cook it and see how it takes. It better char gracefully. And see if it absorbs the delicious smoky taste.

It is the lack of "the people in charge" even being AWARE of these important distinctions that is the tell -- they have no bloody idea whatsoever how to do ANYTHING! Totally out of touch. They either simply want your money (i.e., most likely via gov'mt coercion and funding to skim) or get off on trolling you with crappola.
